Cashew Spinach Dip

A creamy, delicious blend of cashew and spinach is the perfect companion for dipping fresh vegetables.
This recipe provides the following essential nutrients: vitamins A, C, K1; calcium, folic acid, iron, protein, and fiber.

Ingredients

1 cup cashews (soaked for 4-6 hours); drained

1 cup spinach; left at room temperature for 30 minutes to soften; chopped

1 thick slice of onion

1/2 tsp apple cider vinegar

juice of one lemon

2 tbsp water

2 tbsp onion flakes

2 tbsp fresh onion; minced

1 tsp garlic powder

1/4 tsp salt

1/4 tsp black pepper

1/4 tsp cayenne pepper

Instructions

Add the cashews, onion slice, apple cider vinegar, lemon juice and water to blender; blend on high until creamy

Transfer mixture to bowl and add all remaining ingredients; stir until mixed well
