Salad

  • 2 tbsp vegetable oil

  • Juice of 1/2 lime

  • 1/4 tsp salt

  • 1/4 tsp cumin

  • 1 14oz can black beans; drained and rinsed

  • 1 avocado; chopped

  • Juice of 1/2 lime

  • 2 green onions; chopped

  • 1/4 fresh cilantro; chopped

  1. Mix the chopped avocado with the lime juice to prevent browning

  2. Add all ingredients to mixing bowl; mix well

Dressing

  1. Add all ingredients to separate bowl; whisk until incorporated

  2. Pour dressing onto salad; toss
