Spicy Marinated
Mushroom Salad


Featuring marinated mushrooms, this raw vegan salad recipe is zesty and delicious.
This recipe provides the following essential ingredients: vitamins C, K; fiber, magnesium, potassium, and manganese.

Marinated Mushrooms

1 cup fresh mushrooms; sliced

1/4 cup lemon juice

1 tbsp chopped green onions

1 tbsp diced leeks

1 tsp red pepper flakes

1 tsp minced garlic

1/4 tsp paprika
Salad
-
1/2 head red leaf lettuce; chopped

3 mini cucumbers; chopped

1 stalk of celery; chopped

5-6 cherry tomatoes
Dressing
-
6 dates
-
3/4 cup water
-
2 tsp garlic
-
1 tsp cumin
-
1 tsp mustard powder
-
1 tsp red pepper flakes

1 tsp smoked paprika
Instructions
Marinated Mushrooms

Add all ingredients to a bowl and toss; let sit while preparing the rest of the salad
Salad
-
Add all ingredients to separate bowl; toss
Dressing
-
Add all ingredients to bowl but hold back 1/4 cup of water from the 3/4 cup
-
Add the remaining 1/4 as it blends, add as little or more as you like depending on your preference for thickness
