This salad boasts a blend of raw vegan fruits and vegetables with a tasty French dressing. Free of nuts, oil and vinegar, but full of flavor.

This recipe provides the following essential nutrients: vitamins C, K1, B9; potassium, fiber, lycopene, and beta carotene.

Special Equipment

  • 5-6 dates

  • Juice of 1 lime (you could use 1 tbsp apple cider vinegar for a more intense flavor)

  • 3 small cloves of garlic

  • 1/4 tsp smoked paprika

  • 1/4 tsp chipotle powder

  • 1/2 cup water

  • 1 long english cucumber

  • 2 spring onion stalks

  • 2 whole red peppers

  • 2 vine ripened tomatoes

  • 2 cups of little cherry tomatoes

  • 1 cup of any green of your choice

  • High Speed Blender

  1. Cut all vegetables into bite sized pieces

  2. Throw all ingredients into bowl and toss

Dressing

  1. Add all ingredients into high speed blender for up to one minute

  2. Add to salad and toss
