Cauliflower Mashed Potatoes

A delicious twist on a traditional side, this raw vegan version replaces mashed potatoes with cauliflower. 

This recipe provides the following essential nutrients: Vitamins B6, C, K; protein, thiamine, riboflavin, niacin, magnesium, and phosphorous.

Special Equipment

  • 3 cups chopped raw cauliflower

  • 1/2 cup raw cashews (soaked in cold water 4-6 hours beforehand if possible)

  • 1/4 cup nutritional yeast

  • 1 pinch pink salt (optional)

  • 2 tbsp Italian seasoning

  • 1/4 cup fresh chives

  • Food processor fitted with "S" blade

  1. Wash and chop up cauliflower, place into food processor fitted with "S" blade

  2. Add all remaining ingredients except for the chives

  3. Pulse food processor until the mixture gets going, stopping the machine and scraping down as needed. If your ingredients are too dry, you may drizzle in tiny amounts of water one tablespoon at a time to get it really creamy

  4. Taste mixture to see if you would like to add salt or not. When a mashed potato consistency is achieved, spoon it into a serving bowl and top with chives.
