Cashew Cream Salad


This raw vegan dressing blends cashews, sesame seeds, and dates with a spicy kick from lime, mustard and cayenne.
This recipe provides the following essential nutrients: vitamins A, B6, C, K; calcium, copper, manganese, potassium, and magnesium.

1/2 cup cashews, soaked for 8 hours and drained

2 limes juiced

1 tsp Nutritional Yeast

3 tbsp sesame seeds

3 cloves garlic
-
5 dates
-
1 tsp himalayan pink salt

1/2 tsp turmeric
-
1/2 tsp curry
-
Mustard
-
Red pepper flakes
-
Cayenne
-
1/2 cup water
-
4 cups kale, chopped
-
1 cup chopped lettuce
-
1/2 cup chopped beets
-
1/2 cup chopped carrots
-
1/4 celery
-
6 cherry tomatoes

High Powered Blender
Instructions
Dressing
-
Add all ingredients to blender except for water
-
Add water slowly as you are blending the ingredients, stopping when you have reached your desired creaminess
Salad
-
Put all salad ingredients into bowl; add dressing
-
Toss until dressing is mixed well into the salad
