Burrito Wrap

  • 3-4 giant chard leaves

Spice Blend

  • 1 tsp chili powder

  • ½ tsp cumin

  • ½ tsp smoked paprika

  • ½ tsp coriander

  • ½ tsp cayenne

  • ½ tsp salt

Walnut Meat

  • 1 c walnuts, chopped

  • 1/2 c sun-dried tomatoes, soaked 1-2 hours

Rice

  • 3 cups cauliflower florets, processed to “rice” consistency

Pico de Gallo

  • 3-4 tomatoes; diced

  • ½ red onion; diced

  • ½ jalapeno; seeded and diced (leave seeds in if you like some heat)

  • 10 stems cilantro; chopped

  • juice of 1 lime

  • ¼ tsp salt

Special Equipment

  • Food Processor

Additional Ingredients

  • 1-2 avocados; peeled, pitted and sliced

Walnut Meat

  1. Add all ingredients to food processor and blend until well combined

  2. Transfer to bowl and set aside

Pico de Gallo

  1. Combine all ingredients to a bowl; mix well

Burrito

  1. Place chard leaf on cutting board

  2. Top with cauliflower rice, walnut meet, pico de gallo, and avocado slices

  3. Roll into a burrito shape
