Fluffy Banana Pancakes


Filled with coconut cream and fruit, these banana pancakes are a decadent raw vegan dessert.

Ingredients
Coconut Cream and Fruit Filling

1 cup dates

1 cup water
-
½ cup meat of a young fresh coconut

¼ tsp vanilla powder

3¾ cups ripe bananas, chopped
Instructions

Peel the bananas and finely chop them.

Do not mash them with a fork and do not mix them with any device. They should be chopped by hand.

Put a non-stick sheet on a dehydrator tray (I like to use parchment paper). You will need a 4 inch (12 cm) round cake tin.

For each pancake, you will need ¾ cup (140 g) of chopped bananas. Spread them evenly

Dry at 115°F (46°C) for 12-18 hours.

They will be prepared when they are soft, but dry enough so that you can easily peel them off the baking paper.
Coconut cream
-
Mix dates, water, vanilla powder and fresh young coconut meat mix in a blender.

Spreads the cream on the pancakes and fill with fruit.
